Acorn Squash Soup Recipe

A blended soup made with winter squash. Recipe nabbed (and altered slightly) from allrecipes.com.

Recipe Ingredients for Acorn Squash soup

1/2 leek
1/2 stalk celery
2 teaspoons butter
2 teaspoons all-purpose flour
1 teaspoon Vegetable Base
1/8 teaspoon dill weed
1/8 teaspoon curry powder
1/8 teaspoon cayenne pepper
1 1/2 cup water
1/8 cup milk powder
1 1/2 acorn squash

Recipe Directions for Acorn Squash soup

  1. Note: I actually used 1/2 of an acorn squash and baked it in the oven until very soft before using, but the website's calorie count for 1/2 squash kept coming up wrong in the recipe builder. I had to alter the recipe ingredients to 1 1/2 cup to get what the rest of the site said was the count for 1/2 squash.

  2. Chop the onion and celery.

  3. In a large saucepan, saute the onion and celery in butter.

  4. Stir in flour, vegetable base, dill, curry, and cayenne.

  5. Add water and milk powder. Bring to a boil. Cook and stir for 2 minutes.

  6. Add the squash and heat through. (You may add salt and pepper to taste at this point. I added extra curry powder and cayenne instead, because I like it with a little kick.)

  7. Pour the soup into a blender and process until smooth. Pour into bowls.

  8. This is very pretty with a little bit of yogurt or sour cream swirled into the top and sprinkled with a bit more cayenne or dill.
