Recipe Ingredients for Acorn Squash Soup

2 1/4 pounds acorn squash
6 tbsp. butter, unsalted
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/3 cup shallots, chopped
2 medium apples, chopped
1/2 tsp. salt
1/2 cup chicken stock

Recipe Directions for Acorn Squash Soup

  1. Halve the acorn squash and scoop out seeds. Top each half with a small amount of butter with nutmeg and cinnamon. Roast in 400 degree oven for 50 minutes

  2. Sautee shallots in remaining butter. Add apples.

  3. Scoop out flesh of squash and add to pot.

  4. Add stock and cook for 2 minutes.

  5. Use immersion blender to puree all ingredients.

  6. Serve soup warm.
