A warm and healthy soup for the winter time blues.

Recipe Ingredients for Acorn squash soup

1 Acorn squash
5 small red potatoes
2 cups water
2 cups chicken stock
1/2 cup chopped onion
10 baby carrots
1 cup fat free milk
1 cup plain yogurt
1 tbs herbs
1 salt and pepper to taste

Recipe Directions for Acorn squash soup

  1. Peel squash and scoop seeds

  2. peel potatoes

  3. cut into large pieces

  4. dice onion

  5. add to stock and water boil until tender

  6. Pour mixture into blender and puree strain if needed

  7. place back in pot and add milk bring to slow boil

  8. turn off heat and stir in yogurt

  9. garnish with a dollop of yogurt and some sliced scallions
