Recipe Ingredients for Acorn Squash Soup

1 small onion, chopped
1/4 c celery, chopped
2 tbs butter
2 tbs flour
1 tsp chicken bouillon granules
1/2 tsp dill weed
1/4 tsp curry
1/16 tsp cayenne pepper
2 c chicken broth
12 oz evaporated milk
3 cups acorn squash, mashed
1 salt and pepper to taste

Recipe Directions for Acorn Squash Soup

  1. In a large saucepan, saute the onion and celery in butter.

  2. Stir in flour, bouillon, dill, curry and cayenne until blended.

  3. Gradually add broth and milk.

  4. Bring to a boil; cook and stir for 2 minutes.

  5. Add the squash, salt and pepper; heat through.

  6. In a blender, process the soup in batches until smooth.

  7. Poor into bowls; garnish with bacon.
