Acorn squash soup - very easy and delicious. Low in calories.

Recipe Ingredients for Acorn Squash Soup

2 acorn squash
1 onion
3 cloves garlic
1/2 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. cayenne pepper
1 cup milk
2 tbsp. butter
2 tbsp. flour

Recipe Directions for Acorn Squash Soup

  1. Cut squash in half, remove seeds and roast uncovered until tender, about 45 minutes.

  2. Chop onion and garlic and saute in olive oil

  3. Add cooked squash meat to onion and garlic

  4. Add water to cover, can add a tsp of vegetable broth powder

  5. Cook together for a few minutes

  6. Blend, add milk and spices

  7. thicken with roux of butter and flour
