I like to eat this for dinner when I am really hungry

Recipe Ingredients for Acorn squash dinner

2 cups acorn squash
2 tsp smart balance light
1 tbsp brown sugar
2 tbsp orange marmalade

Recipe Directions for Acorn squash dinner

  1. preheat oven to 450 degrees

  2. cut your squash in half lengthwise and remove seeds with an ice-cream scoop

  3. place cut side down in a rectangle baking dish with a half inch of water in it

  4. bake until a knife slides easily through the shell and into the flesh

  5. remove from oven and scoop the squash flesh into 1 cup ramekins

  6. using the back of a spoon make a small well in the middle of each ramekin

  7. fill the wells with 1 tsp of butter each and 1 tablespoon the marmalade

  8. sprinkle half the brown sugar on top of each

  9. return to oven until golden and bubbly

  10. eat
