This dish is a great winter meal in itself. Can easly be cut in half. (Made for Thanksgiving side dish originally)

Recipe Ingredients for Acorn Squash with Apple Sausage Stuffing

10 acorn squash (halved and insides scooped out)
1 lb sausage (sage flavored, no casing)
28 oz cornbread stuffing mix
8 cups chicken broth
1 cup carrot, diced
1 cup celery, diced
1 cup onion, diced
3 gala apples, peeled and diced
1 tbsp extra virgin olive oil
1 tbsp salt
1 tbsp pepper

Recipe Directions for Acorn Squash with Apple Sausage Stuffing

  1. Cut squash in half and scoop out insides. Place in microwave safe dish, cut-side down, with 1 cup water and cover with saran wrap. Cook on high for 20 minutes or until soft.

  2. In a deep dish, cook sausage till brown. Remove with a slotted spoon and place in a bowl till later. In same dish sautee onion till soft (add oil if needed). Add carrot and celery, cook till soft and place in bowl with sausage. Add broth and bring to a boil, add cornbread stuffing mix, cover and remove from heat. Wait 5 minutes and mix with fork. Add sausage mixture and diced apples to stuffing.

  3. Preheat oven to 350 degrees. Place acorn squash cut side up in a dish and add stuffing to squash. Place any additional stuffing to seperate casserole dish and cook along side squash. Cook till heated all the way through and squash in fork tender.
