Recipe Ingredients for Acorn & Butternut Squash Soup

1 small onion, chopped
2 stalks celery, chopped
2 T olive oil
3 chicken bouillon cubes
1 c. fat free half and half
1/2 c. skim milk
2 c. butternut squash
1 c. acorn squash
1/4 c. brown sugar
1 tsp curry
1 tsp chili powder
1 tsp salt
1 tsp pepper
1/2 tsp cinnamon
1/2 tsp nutmeg

Recipe Directions for Acorn & Butternut Squash Soup

  1. Cut squashes in half length-wise, removing seeds. Roast squash at 400 degrees on a greased baking sheet, face down until soft. Acorn squash will need approx. 45 min, but the butternut squash may need to roast up to 1.5 hours.

  2. Peel roasted squashes and mash with a fork. Set aside.

  3. Separately, saute chopped onion and celery in olive oil in a large sauce pan or stock pan.

  4. Add 1 ground up chicken bouillon cube (or 1 tsp of granules) to onion and celery mixture. Use other 2 cubes (or 2 tsp of granules) to make 2 cups of chicken broth. Add 2 c. broth slowly to mixture. Then add in half and half and skim milk. Slowly bring to a boil on medium-low. Let simmer for 2 minutes.

  5. Next, add mashed squash, brown sugar, and spices. Let simmer for 20 min on low. Add more milk or chicken broth if soup gets too thick.

  6. Process soup in food processor in batches.

  7. Serve warm.
