Healthy Asian style coleslaw loosely based on Achewood recipe.

Recipe Ingredients for Achewood Slaw

547 grams cabbage
357 grams carrots
100 g red onion
146 g celery
70 g green onions
102 g cilantro
34 g mint
34 g peanut butter
1/4 c rice vinegar
1/4 c soy sauce
1/2 c lemon juice
1 t sesame oil
28 g peanuts

Recipe Directions for Achewood Slaw

  1. Chop a bunch of veggies. About 5 c cabbage, 2 c shredded carrots, 1 bunch green onions, 1 bunch each fresh mint and fresh cilantro, a couple stalks of celery, about 1/2 c chopped red onion.

  2. Mix up the dressing. 2T peanut butter, 1/4 c rice vinegar (seasoned or unseasoned), 1/4 c soy sauce, juice of 2 lemons (about 1/2 c), 1t sesame oil, 28g chopped peanuts.

  3. Mix it all up in a big bowl.
