Makes 12 servings



very fluffy, delicious cheesecake with sour cream topping. Can add fruit or other flavors to compliment, if desired.

Recipe Ingredients for Abby's Cheesecake

1 1/2 c. sugar
24 oz. cream cheese
9 graham crackers
4 jumbo eggs
1 tsp. vanilla
3 1/2 tbsp. butter, salted
1/4 tsp. cream of Tartar
3 tbsp. sugar
1 pint sour cream

Recipe Directions for Abby's Cheesecake

  1. combine 1 pkg crushed graham crackers (8-9 sheets), 1/2 c sugar, and melted butter in a bowl. Press into springform pan and bake at 325 for 10-12 minutes (until lightly browned)

  2. mix 3 pkgs Philadelphia Cream Cheese (softened) with 1 c. sugar in bowl. Mix until smooth. Separate 4 eggs. Set whites aside, and add one yolk at a time to the cream cheese mixture, mixing until smooth. After all 4 yolks have been added, mix in 1 tsp. vanilla.

  3. In a separate bowl, mix 1/4 tsp. Cream of Tartar with egg yolks. Beat until soft peaks form, but not until stiff. Gently fold into cream cheese mixture.

  4. Pour into crust and bake at 350 for 1 hour.

  5. Mix 1 pint of good quality sour cream (Daisy) with 1 tsp vanilla and 3 Tbsp sugar. spread on top of cheesecake after it finishes baking. Bake at 500 for 5 minutes.

  6. Serves 12.
