Recipe Ingredients for Abbe's Cowboy Cookies (lighter version?)

2 2/3 cups rolled oats
1 cup splenda brown sugar
1 cup splenda sugar substitute
1 cup chopped pecans
2 cups chocolate chips, semi-sweet
2 2/3 cups all-purpose flour
2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
1 cup melted butter, no-salt
1/2 cup egg substitute
2 tsp. vanilla

Recipe Directions for Abbe's Cowboy Cookies (lighter version?)

Mix together dry ingredients in a large bowl. Cream butter, eggs and vanilla in mixer or with a hand mixer in another large bowl. Add dry ingredients. (Make sure all of the chips are distributed evenly or you'll end up with some oatmeal cookies and some very rich chocolate chip cookies.) Shape into walnut-sized balls and place 2" apart on parchment-lined cookie sheets. Bake at 350-375 degrees for 11-13 minutes. A Few Notes: They get crunchy if you bake them a little longer, so bake as long as you prefer. Also, since this recipe makes six dozen, I usually put half of the dough balls in the freezer and then bake as needed. The frozen balls flatten out better if you let them thaw some before putting them in the oven. Finally, this recipe was originally halved and called ?Cowboy Cookies in a Jar,? with the idea being that you can layer the dry ingredients in a quart jar and give it as a gift with the instructions attached.
