Mostly veggie enchiladas with a green poblano sauce.

Recipe Ingredients for AB001 Enchiladas Poblanas

1 1/2 lbs chicken
3 oz cheddar cheese
3 pepper red peppers
3 pepper poblano peppers
918 g evaporated milk
1 large onion
4 cloves garlic
16 corn tortillas

Recipe Directions for AB001 Enchiladas Poblanas

  1. burn skins on poblano peppers and place in bag to steam

  2. boil chicken in lightly salted water, then shred

  3. sautee (in a non-stick pan with water only) peppers and onions

  4. warm tortillas and place chicken & veg mixture inside, laying them face down in a baking dish

  5. peel poblano peppers, de seed, and put in a sauce pan with evap milk. Heat slightly adding flour to thicken if desired.

  6. Blend pepper/milk mixture then pour over the enchiladas in the dish.

  7. sprinkle lightly with cheese

  8. cover baking dish with foil and bake at 350 for 15-20 minutes
