Beautiful salad that can be made ahead and kept in the fridge for a few days since kale holds up to being dressed better than lettuce. Look at the nutritional content on this one! >100% RDA for vits A, C, and good in iron, calcium and fiber too! If you keep this in the fridge ahead of time, you will want to keep the pepitas separately to keep them crunchy. Olive oil, honey and pepitas can be adjusted for dietary concerns. Pepitas are really healthy for you though. A GOOD fat!

Recipe Ingredients for Aarti's Kale Salad (from Food Network)

4 cups g) kale , stalks removed and discarded, leaves thinly sliced
58 g Lemon, juiced
1/4 cup extra-virgin olive oil,
2 teaspoons honey
1 Freshly ground black pepper
1 mango, diced small (about 1 cup)
1/4 cup toasted pumpkin seeds, shelled (pepitas in ethnic aisle)

Recipe Directions for Aarti's Kale Salad (from Food Network)

  1. In large serving bowl, add the kale, half of lemon juice, a drizzle of oil and a little kosher salt. Massage until the kale starts to soften and wilt, 2 to 3 minutes. Set aside while you make the dressing.

  2. In a small bowl, whisk remaining lemon juice with the honey and lots of freshly ground black pepper. Stream in the 1/4 cup of oil while whisking until a dressing forms, and you like how it tastes.

  3. Pour the dressing over the kale, and add the mango and pepitas. Toss and serve.
