Recipe Ingredients for 8LB lean bread dough

89 oz Bread Flour
0.67 oz Yeast
53 1/2 oz Water
1 3/4 oz Salt, Table

Recipe Directions for 8LB lean bread dough

  1. preheat oven to 400 degrees

  2. combine flour and yeast. add water and salt to the mixer, then add the flour and the yeast. mix on low speed with dough hook for 2 minutes, then on medium for 3 minutes. dough should be smooth and elastic.

  3. place dough in bowl or container and cover with plastic wrap for fermentation, until doubled in size, about 30 minutes more for lower rooms with lower humidity, less for rooms with higher humidity.

  4. fold gently, then ferment for another 30 minutes, fold again

  5. ferment for another 15 minutes

  6. divide the dough into 1LB sections each. preshape dough into loaf shape. cover dough to let it relax for about 15 to 20 minutes

  7. proof until the dough springs back lightly when touched 1-1.5 hours

  8. place dough into loaf pan, score top and place in pan and bake until golden brown and bread sounds hollow when hit on the bottom

  9. cool on rack
