You'll have plenty to freeze, and it freezes well.

Recipe Ingredients for 7 Bean Soup - quantity for freezing

4 cups Dried Beans
1 cup smoked ham (or 1 small Ham Hock)
1 tsp fresh grated ginger
2 large onions, chopped
1 tsp lemon pepper
3 tbs barbecue sauce
3 tsp green chilies, chopped
3 cloves garlic, chopped
28 oz tomatoes (Canned Crushed)
16 oz tomatoes (Canned Crushed)
1 1/2 tsp chili powder
6 tbs ketchup
6 stalks celery, chopped
4 cans chicken broth
8 cups water
1/2 tsp bay leaves (2 leaves)

Recipe Directions for 7 Bean Soup - quantity for freezing

  1. Wash, pick over, and soak beans in water to cover by 2 inches, overnight.

  2. In the morning, drain & rinse the beans. Return to pot with 18 cups cold water. Add ginger, and bring to a full boil.

  3. Reduce to active simmer & Cook until tender, 1 1/2 to 2 hours.

  4. Add remaining ingredients. Bring to a boil, lower heat and simmer 3 hours more.

  5. Stir and add water as needed. If you can wait until it's

  6. completely done, you'll have plenty to freeze, and it freezes well.
