Healthy bran muffins using Fiber one cereal

Recipe Ingredients for 6 week Fiber One Raisin muffins

3 cups bran cereal
1 cup boiling water
1 1/4 cup applesauce
1/4 cup oil
1 1/2 cups brown sugar
1 egg
1 egg white
2 cups lowfat buttermilk
1 cup white flour
1 1/2 cups wheat flour
2 1/2 tsp baking soda
1 tsp salt
1 cup raisins

Recipe Directions for 6 week Fiber One Raisin muffins

  1. Pour boiling water over 2 cups bran cereal

  2. Combine rest of ingredients in large bowl

  3. add soaked bran cereal to large bowl

  4. Bake in 400F oven for 15-20 minutes, spray muffin tins with nonstick spray

  5. Store batter in fridge for up to 6 weeks
