Quick easy and cold salad that packs and protein and fiber punch. Beans choices are up to you. I just like the pre-mix for the easy variety.

Recipe Ingredients for 6 bean salad

4 serving 6 bean mix, great value
0.5 cup, chopped Onions
0.33 cup, chopped Onions, Spring Or Scallions
1 tbsp Lemon Juice, Canned Or Bottled
1 tbsp Olive Oil
2 tbsp Vinegar Balsamic
1 stalk, medium (7-1/2" - 8" long) Celery

Recipe Directions for 6 bean salad

Chop onions and celery finely. Toss in bowl. Mix olive oil, vinegar (this can be swapped out for wine vinegar as well), and lemon juice. Mix with chopped veggies. Open, drain, and rinse bean mix. Toss in dressing mix. Add salt and pepper to taste if wanted.
