Makes 16 servings

Half flour is wholemeal, half plain. Makes 16 slices at about 137 calories each

Recipe Ingredients for 50:50 Bread

250 g wholemeal flour
250 g plain flour
1 1/2 tsp salt
1 1/2 tsp yeast, quick acting
3 tbsp olive oil
2 tbsp honey, runny
225 ml water, warm

Recipe Directions for 50:50 Bread

  1. Mix dry ingredients in large bowl.

  2. Add wet ingredients, mix well.

  3. Turn out onto board and knead for 10 minutes (not, will seem too dry at first, no need to add more water).

  4. Place into oiled loaf tin, smooth oil over the top too as it prevents sticking (I use some of the oil that the mix calls for).

  5. Cover with warm, damp tea towel or clingfilm (loosely) and leave to rise in a warm place until about double in size. As using quick-acting yeast you don't need to knock it back and knead again now.

  6. Bake in pre-heated oven at 200 deg C for 25-30 minutes - to know it is done tap the base, it should sound hollow.
