Healthier version of old fashioned bread.

Recipe Ingredients for 50/50 Whole Wheat Bread

2 tablespoons active dry yeast
1/2 cup warm water
1 3/4 cup warm 2% milk
3 1/2 cups bread flour
3 1/2 cups whole wheat flour
3 tablespoons brown sugar
1 tablespoon salt
2 tablespoons canola oil

Recipe Directions for 50/50 Whole Wheat Bread

  1. Scald milk and then cool to lukewarm.

  2. Warm 1/2 cup water and place some of the brown sugar in it and then the yeast and allow it to become foamy.

  3. Add milk, salt, bread flour, rest of sugar and oil and mix till smooth.

  4. Add wheat flour 1/2 cup at a time and mix with dough hook until it cleans the bowl. Continue to mix on speed 2 for 7-10 minutes.

  5. Place in a greased bowl and turn over so top of dough is greased.

  6. Allow to raise until double in size. (about an hour)

  7. Punch down and let rest for 15 minutes.

  8. Divide dough in half.

  9. Roll each half into a 9 x 15" rectangle. Roll from short side to form a tight roll. Tuck in ends and place in greased bread pan seam down.

  10. Allow to raise till double. Dough should not rebound when touched lightly with finger.

  11. Cook in 425 degree oven 25-30 minutes until browned and it sounds hollow when you tap on it.

  12. Remove from pans immediately, place on rack to cool and lightly brush tops of loaves with canola oil or margarine.
