Recipe Ingredients for 4 onion soup

1 med yellow onion
1 med red onion
5 green onions with tops
1 med leek
1 clove of garlic
2 tbls butter
14 1/2 oz beef broth
1 can beef consomme
1 tsp worcestershire
1/2 tsp ground nutmeg
1 cup shredded swiss cheese
6 slices french bread
6 tbls grated Parmesan cheese

Recipe Directions for 4 onion soup

slice all onions and leek 1/4 in thick. In a large sauce pan, cook onions and leek and garlic in butter over medium heat for 15 mins or until tender and golden, stirring occasionally. Add the broth, consomme, Worcestershire sauce and nutmeg, bring to a boil. Reduce heat; cover and simmer for 30 mins. Sprinkle 1 tbls of Swiss cheese in the bottom of six oven proof 8 oz bowls. ladle hot soup into bowls. Top each with a slice of bread. Sprinkle with remaining Swiss cheese and Parmesan cheese if desired. Broil 6-8 in. from the heat or until cheese melts. Serve immediately. make sure your broiler is on low setting or you will burn the bread.
