Muffin batter can be kept in the fridge for up to 4 days. Great for making a few muffins each morning for a warm breakfast!

Recipe Ingredients for 4 day bran muffins

2 c Original Cereal
2 c Buttermilk
1 large egg
1/4 cup canola oil
4 tablespoons skim milk
3 tablespoons Milled Flax Seed
1 tablespoon water
12 tablespoons Milled Flax Seed
2 cups whole wheat flour
2/3 cup packed brown sugar
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt

Recipe Directions for 4 day bran muffins

  1. Soak the cereal in the buttermilk for 2-3 minutes

  2. Mix the rest of the ingredients directly into the soaking cereal.

  3. Bake 15-13 minutes

  4. Enjoy!
