Recipe Ingredients for 30 day muffins

1 eggs
30 g dark brown sugar
250 ml milk, low fat
40 ml sunflower oil
100 g plums, chopped
200 g spelt flour, wholemeal
1/4 tsp salt
40 g oats, organic
1 1/2 tsp bicarbonate of soda

Recipe Directions for 30 day muffins

  1. Whisk the eggs and sugar/honey together, and pour in the milk and vanilla. Stir well.

  2. Add the sunflower oil, and fruit (change for cooking apple, fresh currants).

  3. Sieve the flour with the bicarbonate of soda and salt, and add to the mixture with the bran.

  4. Mix again and cover tightly until needed - this mixture will keep in the fridge for up to 30 days (during which time the bran will swell).

  5. Preheat the oven to 180C/gas 4.

  6. Stir the mixture before using.

  7. Fill muffin cases in a muffin tin until three quarters full.

  8. Bake for 15-20 minutes, or until firm to the touch and golden.

  9. Cool on a wire rack before serving.
