Potatos are packed with nutrients. This is a starchy recipe that is satisfying on a cold day and requires no fat to acheive delicious, creamy mouth-feel and incredible flavor

Recipe Ingredients for 3 potato soup

3 Potatos
1 Green Onion
1 tbl Rosemary
1 Salt (optional)

Recipe Directions for 3 potato soup

  1. Chop green onions into small pieces and slice potatos. Add both to wok with a small bit of water. Stir around a bit for a minute or two at high heat to allow a Maillard reaction. Then reduce heat and stir in rosemary to taste. Add 1/2 cup of water and cover. Let simmer at medium low heat for 20 minutes or until potatos are soft enough to smush with a spoon. Some browning on the bottom is desired.

  2. Smush potatos into desired consistency. I like some smooth and some lumpy bits. Add additional water to make the soup as thick as you are in the mood for. I like it medium thick with varying consistency so that some bites have lumps and some don?t.

  3. Serve in mugs or bowls.
