3 Egg Omelet with peppers, tomatoes, turkey bacon & cheese.

Recipe Ingredients for 3 Egg Omelet

3/4 cup Eggs, whole scrambled
1/2 tomato Tomatoes, Red, Ripe
1/2 Peppers, sweet, red-raw
2 serving Turkey Bacon
1 oz Tillamook Cheddar Cheese

Recipe Directions for 3 Egg Omelet

  1. Fry bacon in 8" pan at high heat, turning over frequently to cook evenly, take out before the bacon becomes crisp.

  2. Dice peppers and tomatoes and put into pan (with bacon fat) @ medium heat. Cook for 2-3 minutes stirring frequently. Add diced bacon @ 2 minutes.

  3. Scramble 3 medium eggs adding salt and pepper to taste. Add to the pan. Eggs should thinly layer the bottom of the pan. Cook for 3 minutes @ medium heat.

  4. Shred the cheese and add to the pan at about the 3 min. mark.

  5. Turn 2 sides of the omelette towards the middle (fold in thirds). And after 1 minutes turn the omelet over.

  6. Continue cooking the omelet until golden brown; about 3 more minutes.
