Recipe Ingredients for 3-Cheese Eggplant Bake GF

2 cup, cubes Eggplant
6 serving VIGO EXTRA VIRGIN OLIVE OIL
1 medium (2-1/2" dia) Onions
3 clove Garlic
3 piece Tomatoes, Sun-dried
3 tomato Tomatoes, Red, Ripe
2 cup Spinach
1 cup Ricotta, Part Skim Milk Cheese
4 oz Mozzarella, Part Skim Milk Cheese
1/2 cup Parmesan, Grated Cheese
2 c. pasta sauce

Recipe Directions for 3-Cheese Eggplant Bake GF

  1. 1. Brush eggplant slices with olive oil. Bake 325 for 20 minutes.

  2. 2. Saute the rest of the vegetables in remaining olive oil.

  3. 3. Mix together the ricotta and mozzarella cheses.

  4. 4. Layer the eggplant, vegetable mixture, and cheese mixture.

  5. 5. Top wit basil and Parmesan. bake uncovered for 30 minute at 325.
