A chili made for folks who do not eat meat or those who want to get more fiber into their diet.

Recipe Ingredients for 3 Bean Garden Chili

16 oz pinto beans
16 oz black beans
16 oz red beans
56 oz diced tomatoes
20 stalks of celery
9 bell peppers
2 onions
5 small zucchini
1 cup vegetable broth
5 tablespoons minced garlic
1 cumin to taste
1 chili powder to taste

Recipe Directions for 3 Bean Garden Chili

  1. Soak beans overnight per package directions

  2. Next morning, drain and rinse beans. Put back into pot and cover with 18 cups of water. Bring to boil, reduce heat to medium and cook until beans are tender but not mushy. Drain beans and rinse out pot.

  3. Add minced garlic, celery and 2 tablespoons of the the vegetable broth and saute until celery is almost tender, add onions and bell peppers. Cook until almost tender and then add the zucchini, cilantro, cumin and chili powder. Cook about 5 minutes and then add the diced tomatoes, remaining broth and beans. Cook for about another 20 minutes.
