Home made, 3 bean & 3 bell peppers

Recipe Ingredients for 3 Bean Chilli

1 red pepper
1 yellow pepper
1 green pepper
1 red chilli pepper
2 red onions
2 cloves garlic
1 tsp chilli powder
1/2 tsp coriander powder
2 tbsp olive oil
50 g kidney beans
50 g pinto beans
50 g black beans
400 g chopped tomatoes
1 tbsp balsamic vinegar

Recipe Directions for 3 Bean Chilli

  1. soak beans in advance as per pack instructions,

  2. drain, rinse and boil dried beans for about 40 minutes, then drain (alternatively just add 2-3 cans of mixed beans with the can of chopped tomatoes),

  3. roughly chop peppers (discard seeds) and onions,

  4. crush garlic,

  5. then

  6. EITHER

  7. heat oil in pan, add spices, chilli pepper and garlic

  8. add onion then after 5 minutes add peppers,

  9. cook gently until onion is translucent (about 10 minutes)

  10. OR

  11. coat peppers & onion in oil and roast, about 20 mins, then heat oil in pan, add spices, chilli pepper and garlic, cook briefly then add roasted vegetables,

  12. add tomatoes and beans, mix then cook gently to reduce (about 20 minutes),

  13. add balsamic vinegar before serving.

  14. Best cooked a day in advance and reheated.

  15. Serve in wraps, tacos or with rice/salad.
