Modified morning glory muffins recipe

Recipe Ingredients for 24 carat muffins

1 1/2 cup whole wheat flour (about 4 3/4 ounces)
250 g regular oats
3/4 cup packed brown sugar
1 tablespoon wheat bran
2 teaspoons baking soda
1/4 teaspoon salt
1 cup plain fat-free yogurt
1 banana
1 cup shredded carrot
1 1/2 cup chopped pineapple
2 large egg whites
1 cup raisins
3/4 cup chopped pecans
1/2 shredded coconut
3 tbsp ground flaxseed (about 2 tablespoons whole)
1 tbsp cinnamon
1/2 tbsp ground nutmeg

Recipe Directions for 24 carat muffins

  1. Preheat oven to 350.

  2. Place 24 muffin cups liners in muffin cups; coat liners with cooking spray.

  3. Lightly spoon flours into dry measuring cups, and level with a knife. Combine flour, cinnamon, nutmeg and next 5 ingredients (through salt) in a large bowl; stir with a whisk. Make a well in center of mixture.

  4. Combine yogurt, banana, and egg; add to flour mixture, stirring just until moist.

  5. Fold in shredded carrots, pineapple, shredded coconut, raisins and pecans. Spoon batter into prepared muffin cups. Sprinkle evenly with flaxseed.

  6. Bake at 350 for 20 minutes or until muffins spring back when touched lightly in center. Remove muffins from pans immediately; cool on a wire rack.

  7. Yield: 24 servings (serving size: 1 muffin)
