This recipe should make 6 servings- high in protein and fibre, but low in vegetables. Serve with 2 handfuls of vegetables- salad with greens, zucchini, peppers, mushrooms to make a complete meal

Recipe Ingredients for 2012 meat and potato casserole

1 lb ground lean beef, veal or turkey
2 t oil
2 onions
1 T garlic
1 T chili powder
4 stalks celery
1 red pepper
1/2 t red pepper flakes
1/2 t cumin, parsley, italian spices
1 c cauliflower
28 oz canned diced tomatoes
19 oz can black beans
3 medium red potatoes
4 oz low fat cheddar

Recipe Directions for 2012 meat and potato casserole

  1. cook onion, red pepper, garlic, celery, cauliflower in lge fry pan (or dutch oven) in some oil, then remove from pan

  2. cook beef, ground turkey or veal in pan

  3. add vegetables back to pan

  4. add can of tomatoes and can of beans

  5. spray a lasagne pan and spread the mixture evenly

  6. slice potatoes thin, layer all over the top

  7. cook 45 minutes at 400 degrees

  8. sprinkle cheese over top

  9. heat to melt the cheese

  10. separate into 6 containers

  11. freezes well
