These sandwiches are perfect for dinner and easy to make. To trim calories, use Pam instead of butter and use less of the Thousand Island dressing

Recipe Ingredients for 2011-Reuben Sandwiches

6 tablespoons Thousand Island dressing
12 slices rye bread
6 ounces Swiss cheese, sliced
16 ounces sauerkraut, drained
3/4 pound corned beef, cooked, thinly sliced
1/4 cup butter, softened

Recipe Directions for 2011-Reuben Sandwiches

Spread 1 Tablespoon of Thousand Island dressing over each of six slices of bread. Top with a slice of cheese, sauerkraut and corned beef. Top with remaining bread slices. Spread teaspoon butter over each top slice of bread. Place sandwiches butter side down in a skillet. Spread remaining butter on top slices. Cook uncovered over low heat about 10 minutes. Turn the sandwiches over and cook another 8 minutes.
