Recipe Ingredients for 2011-Corned Beef Hash

4 tablespoons butter
2 cups onions, yellow, diced
1/8 teaspoon salt
1/8 tsp black pepper, freshly gound
1 tablespoon garlic, chopped
8 ounces corned beef, chopped
4 medium potatoes, diced and blanched

Recipe Directions for 2011-Corned Beef Hash

Preheat the oven to 400 degrees. In a large oven-proof skillet, melt the butter. Add the onions and cook 4 minutes until golden. Add the salt and pepper and the garlic. Cook 2 minutes. Add the corned beef. Cook 2 more minutes. Add the potatoes and cook for 4 minutes. Using the back of a large spatula, pack the mixture firmly into the pan. Place the pan in the hot oven and cook another 8-10 minutes. Place under the broiler 1-2 minutes to brown the top if desired.
