This is an easy and colorful salad with lots of fiber and flavor.

Recipe Ingredients for 2011-Chopped Salad

1 cup onion, chopped
1 cup apple, green, chopped
1 cup tomato, chopped
1 cup cucumber, chopped
1 cup green pepper, chopped
4 tablespoons lemon juice
1/3 cup olive oil
1/8 teaspoon salt
1/8 teaspoon black pepper

Recipe Directions for 2011-Chopped Salad

Mix the chopped vegetables and apple together in a mixing bowl. Combine remaining ingredients; pour over apples and vegetables. Toss. Refrigerate to allow flavors to blend.
