Recipe Ingredients for 2010 Eggplant Stew

2 tablespoon olive oil
100 g onions
12 oz Eggplant
50 g garlic
520 ml Salsa
250 g sweet potato
600 g red sweet pepper
30 g dried mushrooms
1400 ml tomatoes
1 tablespoon balsamic vinegar

Recipe Directions for 2010 Eggplant Stew

  1. Soak Dried Mushroom in broth and a lemongrass tea

  2. cut eggplant into a collander salt them and then put something heavy on top to compress it.

  3. heat oil in dutch oven

  4. sweat onion until translucent, add garlic and stir for 1 min

  5. Turn down heat, add eggplant and red peppers. stir around, and cook until eggplant is severely reduced down. The water will evaporate down to about 3/4 of its size.

  6. WHile eggplant is cooking, boil sweet potatoes in salted water.

  7. When you can put your fork through the sweet potato, drain both sweet potatoes and mushrooms. Combine both in a bowl with salsa (mango is best) and tomatoes.

  8. When Eggplant is reduced to a thick paste like consistency, add tomatoes, mushrooms, salsa and sweet potatos to the dutch oven. Cover and let simmer for about 30 mins.
