This is AWESOME!!!! The dough recipe (minus the flax seed) is from "Pizza on the Grill." http://www.amazon.com/Pizza-Grill-Feisty-Fire-Roasted-Recipes/dp/1600850065/ref=pd_bbs_sr_1?ie=UTF8&s=books&qid=1231525732&sr=8-1 I kneaded the dough for about 5 minutes. I wasn't gentle with it at all, and it came out beautiful. I let it rise on a warm window sill all day -- it doubled maybe even tripled in size. Then I spread it in an oiled pan, covered with plastic, and let it rest while I chopped the ingredients for the pizza. For the pizza, I roughly followed the steps here: http://www.pizzamaking.com/dkm_chicago.php: Preheat the oven to 450. Give it at least 30 minutes to come up to temp. Cheese goes on first. Then toppings. I highly recommend finely diced hard salami and shredded mozzarella. Figure on 8 oz. of salami and 16 oz. of reduced fat mozz. Finely dice an onion, and it'll be perfection. Top with a 28oz can of diced tomatoes (well drained), and sprinkle with basil, oregano, salt, black pepper, and parmesan cheese. Bake in the middle rack. Mine took about 30 minutes. Refrigerate the leftovers -- it's delicious cold. And it freezes and reheats better than any pizza I've ever had.

3 c flour
1/4 c olive oil
1 tsp salt
1/4 c flax seed
1 tsp sugar
1 cup water

Recipe Directions for 2009 Pizza Dough w/Flax Seed

  1. Mix water, oil and sugar

  2. Sprinkle on one packet of yeast and let sit for 5 min until foamy

  3. Mix flour, salt and flax seed meal

  4. Add flour mixture to liquid 1/2 c at a time

  5. Dough should be soft and slight sticky

  6. Turn out onto floured surface and knead for 1 minute until elastic

  7. Cover with plastic and put in warm spot for 1 hour until double in size
