A yummy vegan, low-carb, low-cal lasagna.

Recipe Ingredients for 2000 calorie lasagne

3 cup mushrooms, sliced
1 medium eggplant
2 medium zuccini
3 cup marinara sauce
1 block tofu
2 tablespoon lemon juice
10 oz frozen chopped spinach
10 oz fat free parmasean or romano or mozzarella mixed cheese
1 cup chopped bell peppers
1 medium onion
1 cup fresh spinach
1/4 cup garlic
2 tablespoon Thyme
2 tablespoon Oregano
2 tablespoon Basil

Recipe Directions for 2000 calorie lasagne

  2. I actually used vegan "cheese" to make it, but CC won't let me put that in for an accurate calorie count, and I'm sure nonfat would work the same.

  3. Preheat oven to 375.

  4. Slice the mushrooms, eggplant, and zucchini into 1/4-1/2 inch slices. These are your noodle layers. The mushrooms and eggplant should be, lightly spritzed with oil and roasted 5 minutes on each side.

  5. Pour a little of the sauce on the bottom of the pan you plan to bake the whole thing in, then choose either mushrooms, eggplant, or zucchini as your bottom layer. If choosing zucchini, put a ton of thyme on it after you put it down.

  6. Mix the defrosted chopped spinach with your ricotta, and lay that on top of your 1st layer. Sprinkle some of the parm/romano/mozz on this for an extra real-cheese kick, and some more sauce.

  7. Lay another vegetable-noodle layer on top of the cheese.

  8. Saute with another spritz of oil: onions and garlic, then add the peppers, and some oregano, finally fresh spinach leaves. Mix this with a small amount of sauce and lay it onto your growing lasagne! Add more "cheese" if desired, also optional here is red pepper.

  9. Put down your last layer and finish off the sauce by dumping it on top, then dump the rest of the cheese on top too.

  10. Cover with tin foil and put in the oven for 40-60 minutes, basically until it looks done. If you didn't fully roast / saute some things, you may want to uncover it for the last 15 minutes to get more liquid out.
