Recipe Ingredients for 20-minute Pad-Thai-Style Noodles

1/4 cup smooth peanut butter
1 cup vegetable broth
1/4 teaspoon ground ginger
1 tablespoon hot sauce
1 tablespoon sesame oil
2 tablespoons flour
1 tablespoon olive oil
2 tablespoons minced garlic
1/2 cup sliced red onion
1 cup sliced mushrooms
1 cup broccoli florets
1/3 cup shredded carrots
1 cup yellow bell pepper, sliced
1/4 cup peanuts, crushed
8 ounces linguine

Recipe Directions for 20-minute Pad-Thai-Style Noodles

  1. Cook the pasta according to the package directions. Drain. Meanwhile, heat the oil in a wok or large sauté pan over medium heat. Add the garlic and sauté for 1 minute, or until fragrant.

  2. Add the onion, mushrooms, and broccoli. Sauté for 3 to 5 minutes, or until the onion has softened.

  3. Stir in the carrot, bell pepper, prepared sauce, and cooked pasta. Sauté for 3 to 4 minutes, or until the sauce thickens and the dish is heated through.

  4. Top with the crushed peanuts before serving.
