This recipe is quick and easy to prepare and tastes great. Usually this is served over whole grain rice or pasta, but to make the recipe more generalized, that isn't included in the nutritional breakdown (since everyone has different "carb" choices).

Recipe Ingredients for 20 -Minute Chicken Creole

1 Pam cooking spray
1 lb. boneless, skinless chicken breasts, cut into strips
14 oz diced tomatoes, low sodium
8 oz chili sauce, low sodium
1 1/2 cups chopped green pepper
1 1/2 cups chopped celery
1/2 cup chopped onion
2 cloves garlic, minced
1 tsp dried basil
1 tsp dried parsley
1 tsp crushed red pepper

Recipe Directions for 20 -Minute Chicken Creole

  1. Spray a large skillet with Pam cooking spray.

  2. Cook chicken over medium-high heat until no longer pink.

  3. Reduce heat and add tomatoes (including the juice), chili sauce, green pepper, celery, onion, garlic, basil, parsley, and crushed red pepper.

  4. Bring to a boil, then reduce heat, cover, and simmer for 10-15 minutes.
