Recipe Ingredients for 2 Mushroom Risotto

1 1/2 cup Arborio Rice
1 serving Dried Shitake Mushrooms
2 NLEA serving Carrots, Baby
1 medium (2-1/2" dia) Onions
1 oz Extra Virgin Olive Oil
5 clove Garlic
4 oz Wine, Table, White
4 serving Low Sodium Vegetable Broth Trader Joe's
1 cup, diced Mushrooms, Portabella
8 serving Grated Parmesan Cheese Trader Joe's

Recipe Directions for 2 Mushroom Risotto

Heat the oil to medium and add the onions, carrots, mushrooms, and garlic. In a seperate pan, heat the broth. Cook until onion is translucent. Add the rice and stir to coat well. Add the wine and stir until most of the moisture is gone. Begin adding the broth slowly while stirring. Add more liquid only when the rice thickens. Finish by adding the parmesan at the end.
