Recipe Ingredients for 2 large egg crunchy veggie omelet

2 large eggs
1 tbsp non-fat milk
1/4 cup bell peppers, chopped
1/4 cup onions, chopped
1 large mushroom, chopped
1/4 cup zucchini, chopped
1/4 cup eggplant, chopped
1/8 cup green onions, chopped
1/4 cup celery, chopped
2 medium radish, chopped
1/4 cup carrots, chopped
1/4 cup broccoli, chopped
1/4 cup cauliflower, chopped
1 tsp canola oil
1/2 medium tomato, diced
1/4 cup cucumber, diced
1/4 cup raw beets, chopped
1/4 cup turnip, chopped
2 tbsp salsa

Recipe Directions for 2 large egg crunchy veggie omelet

  1. Coat medium frying pan with canola oil

  2. Mix eggs and milk

  3. Chop veggies, add all but tomatoes and cucumber to eggs

  4. Heat frying pan on medium heat

  5. Pour omelet mix into frying pan

  6. Cook through

  7. Fold over diced tomato and cucumber

  8. Top with salsa
