Veggie omelet with small amount of cheese and cooked in Pam.

Recipe Ingredients for 2 egg veggie omelet - no oil

2 eggs
1/4 cup green peppers
1/8 cup onion
1/8 cup mushrooms
1/4 ounce cheese, shredded

Recipe Directions for 2 egg veggie omelet - no oil

  1. Beat two eggs, set aside

  2. Chop veggies and saute pan lightly sprayed with Pam.

  3. Remove veggies from pan and add beaten eggs, scramble slightly and let set for about 30 seconds.

  4. Add veggies to one side of the omelet, sprinkle cheese on veggies, fold other half of omelet over the veggies, let cook for a few more minutes.
