Recipe Ingredients for 2 Egg Migas

1 tbsp vegetable oil
2 large eggs
2 corn tortillas

Recipe Directions for 2 Egg Migas

  1. heat oil in pan, tear up the corn tortillas into small pieces, and scramble the eggs in a bowl.

  2. when oil is hot, add the corn tortillas and toss until slightly crispy and golden brown.

  3. add the eggs on top of the tortillas. Turn occasionally, until the eggs are cooked.
