Muffins that are similar to the oat-applesauce spiced muffins, but these are CHOCOLATE! A hint of cinnamon and almond flavoring are in the mix, but the star is the Chocolate flavor!

Recipe Ingredients for #2 Chocolate Oat-Apple Muffins

1 cup dry Old Fashioned Quaker Oats
1 cup Buttermilk
1 cup Organic Whole Wheat Flour
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1/2 cup Apple Sauce Unsweetened Organics
1 large egg (Organic brown egg)
1/3 cup Hersheys Unsweetened Cocoa
6 servings cup Agave Nectar (1/3 cup)
1 tsp Vanilla Extract
1/4 tsp Almond Extract
1 1/4 tsp Cinnamon, Ground

Recipe Directions for #2 Chocolate Oat-Apple Muffins

  1. Mix Oats and buttermilk in a bowl and let set for 2 hours at room temperature.

  2. Preheat oven to 375 degrees F. (or 195 degrees C.)

  3. Spray the cups in a muffin tin with Canola oil (or other) non-stick baking spray.

  4. Sift and stir together whole wheat flour, baking powder, baking soda, and cinnamon,

  5. Stir in the cocoa powder also. Set aside.

  6. In a third bowl, mix together Applesauce, Agave Nectar, egg (slightly beaten), Vanilla and Almond extracts. Mix well.

  7. Combine the applesauce mixture with the oats/buttermilk mixture and stir together.

  8. Finally, stir the dry ingredients into the wet ingredients. Mix just enough to moisten all together.

  9. Spoon into sprayed muffin cups and bake at 375 degrees F. for 30 minutes, or until a toothpick inserted into center of a muffin comes out clean.

  10. Cool on rack. Makes 12 muffins. About 120-125 calories per muffin
