A healthy salad that could be a main course

Recipe Ingredients for 2-bean salad

8 oz cooked Kidney beans
8 oz cooked Garbanzo beans
1 red pepper
1 green bell pepper
1 cup chopped green onions
1/2 cup chopped parsley
1 tbsp cilantro
1 tbsp olive oil
1 tsp paprika
1 tsp salt
1/2 cup lime juice

Recipe Directions for 2-bean salad

  1. Chop the peppers, green onions, parsley and cilantro.

  2. Add 1/2 cup chopped carrots if desired.

  3. Mix all the ingredients and refrigerated for atleast 2 hrs for the flavors to be absorbed.
