Best recipe I have made...and I have made a lot! If you use different rice just change broth and cooking time to package instructions.

Recipe Ingredients for 1st Place Spanish Rice

1 tablespoons olive oil
1/2 onion, chopped fine
1/2 garlic clove, minced
1 cup brown rice
2 1/2 cups Chicken Broth
1 1/2 tbsp Sofrito
1 tbsp Diced green chilies

Recipe Directions for 1st Place Spanish Rice

  1. In a large skillet brown rice in olive oil, medium/high heat. Add onion and garlic. Cook onion rice mixture, stirring frequently, about 4 minutes, or until onions are softened.

  2. In a separate sauce pan bring stock to a simmer. Add sofrito and chilies. Add rice to broth. Bring to a simmer. Cover. Lower heat and cook 40 minutes. Turn off heat and let sit for 5 minutes.
