Recipe Ingredients for 1574 Vegetables: Summer Gratin

2 leeks, white and light green parts
1 zucchini, sliced diag 1/4" thick
1 yellow squash, sliced diag 1/4" thick
3 T. olive oil
1 salt and pepper to taste
2 T. bread crumbs
2 T. Parmesan cheese, freshly grated
1 garlic clove, minced
2 tsp. thyme leaves, fresh

Recipe Directions for 1574 Vegetables: Summer Gratin

  1. Heat oven to 425 degrees.

  2. Brush a 9-in pie plate with oil.

  3. Trim stem ends of leeks and cut into 1/4-inch diagonal rounds.

  4. Place in a bowl of cold water for 5 min to rid them of dirt and sand. Pat dry.

  5. In med bowl, gently toss leeks, zucchini, squash, 2 T. olive oil, salt and pepper to taste. Arrange veg slices in bottom of pie plate, slightly overlapping them.

  6. In a small bowl, combine bread crumbs, Parmesan, garlic, thyme, salt and pepper to taste. Mix remaining 1 T. oil until mixture is crumbly. Sprinkle the crumb mixture over vegetables, bake until the bread crumbs are golden brown and vegetables are tender, about 25 minutes.
