Low-calorie, flavorful squares to use as base for schmears/cheeses.

Recipe Ingredients for 1574 Vegetables: Spinach squares

10 oz. spinach, frozen and chopped
1 garlic clove
1/4 c. parmesan cheese, grated
1 tsp. salt
1 tsp. black pepper
1 tsp. red pepper
1 egg
2 tbs. cheddar, grated

Recipe Directions for 1574 Vegetables: Spinach squares

  1. Thaw and squeeze out all liquid from spinach. Place into food processor with garlic, parmesan cheese, pesto, salt, peppers and egg. Process thoroughly so that it is spreadable.

  2. Spread thinly onto cookie sheet lines with parchment or silpat. Top with grated cheddar. Bake at 375 until dried out .

  3. Cut into 2" in squares. Store in airtight container for about a week.
