This uses eggplant, squash and tomatoes. Change it up and update the calories as desired.

Recipe Ingredients for 1574 Vegetables: Roasted Veg Combo

1 eggplant
1 squash
2 tomatoes
4 tbs. olive oil
1 c. mozzarella cheese
1/4 c. parmesan cheese
1/4 c. basil leaves

Recipe Directions for 1574 Vegetables: Roasted Veg Combo

Slice all veg about 1/4" to 1/2" thick. Drizzle with olive oil, cheese, basil. Roast 40 minutes at about 400 degrees or until desired doneness. May put this into a pie crust for veggie tart. So good.
