Casserole made from garden eggplant, tomatoes and cheese. We use eggplant and Romas from our own garden. Delish.

Recipe Ingredients for 1574 Vegetables: Eggplant-Tomato-Mozz Bake

1 eggplant, large, 1/2 " dice
4 Roma tomatoes
1 tbs. basil leaves, dried
2 tbs olive oil
1/2 c. parmesan cheese, grated & divided
1 1/2 c. mozzarella cheese, shredded

Recipe Directions for 1574 Vegetables: Eggplant-Tomato-Mozz Bake

  1. Peel and dice eggplant place in bowl. Add diced tomatoes, basil leaves and 1/4 C. parmesan. Drizzle with olive oil and stir well. Pour into casserole. Sprinkle with mozzarella cheese and remaining parmesan cheese. 375 until bubbly. Makes 8 big servings.

  2. Bake at 350 for 40 minutes.
