This recipe is designed to feed the masses. This recipe is for a LARGE aluminum pan, like the kind used in chafing dishes. About 12.5 X 10.5 X 2.5 inches deep. A great breakfast casserole-type dish.

Recipe Ingredients for 1574 Ultimate Grillards & Grits Quiche

7 c. water
1 tsp salt or to taste
1 1/2 c. grits, dry
6 tbs. butter
1/2 tsp. cayenne pepper
3 c. pork shoulder, roasted and chopped
1 large yellow onion, chopped
1 T. olive oil
11 eggs
1 1/4 c. milk
1 c. cheddar, shredded
1/2 c. swiss cheese, shredded

Recipe Directions for 1574 Ultimate Grillards & Grits Quiche

  1. Preheat oven to 350 degrees.

  2. Boil 7 C. water and add salt to taste.

  3. Slowly pour grits into the water and stir well.

  4. Reduce heat to low, cover and cook 15-20 minutes.

  5. Add butter and cayenne & mix well.

  6. Pour into large aluminum pan, see description above.

  7. Let cook slightly.

  8. Chop roasted pork shoulder and put on top of the grits.

  9. Caramalize onion in a little bit of olive oil and pour on top of pork.

  10. Mix eggs and milk thoroughly and pour on top of grits, pork and onion.

  11. Top with cheese.

  12. Bake at 350 degrees for about 30-40 minutes until eggs are set.

  13. Let stand about 5 minutes before serving.
