Roasted vegetables in savory tart shell

Recipe Ingredients for 1574 Tart Filling: Tomato, Onion, Olive & Feta

2 tbs. olive oil
3 plum tomatoes, sliced 3/8" thick
1 yellow onion, large and sliced 3/8" thick
8 olives, cut in half
4 oz. goat cheese
1/4 c. basil, minced
1/4 c. italian parsley, minced
1 Salt and pepper

Recipe Directions for 1574 Tart Filling: Tomato, Onion, Olive & Feta

Preheat oven to 400 degrees. Roast tomatoes and onion in foil-lined pan coated with olive oil. Sprinkle with salt and pepper to taste about 30 minutes. Set aside to cool. When cool, arrange tomatoes and onions in decorative pattern. Sprinkle with olives, goat cheese, basil and parsley. Reduce heat to 350 degrees and bake 30 minutes until desired doneness and bubbliness.
